Sin Eater is the guy who connected her with the Copper Knight in the first place. He obviously is a bridge between the occult underworld and academia in New York City, but it has not been revealed exactly who he is or what he's up to. He features in some other stories that we have not published yet, so we will get to find out eventually.
The name is a reference to a occult, backwoods American Protestant folk belief that an evil person can get someone else to voluntarily take on their spiritual debt, letting them escape damnation upon, or shortly after, their death.
When Michael does research, he does research. He lends verisimilitude to alternate history like no other.
As for Chemistra, I mean, she's only cursed if she doesn't share her findings with Sin-Eater. Of course, she doesn't believe in curses and may even be turning into one of the good guys so...
She's screwed, isn't she?
As for Sin-Eater, this is far from the last we will see of him.
